GINGERBREAD APPLE MUFFINS


1/2 cup canola oil

1/2 cup milk

1 cup golden syrup

1 egg


3 cups self raising flour

1/2 teaspoon bicarb soda

1/2 teaspoon salt

1 teaspoon cinnamon

2 teaspoons ginger

1/4 cup white sugar

1/4 cup brown sugar


2 apples, pled and small dice


preheat oven to 180 c (160 c fan forced) 350 f.


line muffin tins with paper patty pans.


in a small bowl, mix all the wet ingredients together.


in a large bowl, mix all the dry ingredients together, making sure the brown sugar is not lumpy.


stir the wet ingredients into the dry until just combined.


stir in the apples.


3/4 fill each patty pan.


cook for 20 - 25 minutes or until browned and a skewer comes out clean.


cool in tin for 10 minutes.


serve warm as is or as a dessert with custard.
