BANANA MUFFINS...with honey and walnuts

250 grams self-raising flour
3/4 cup sugar
1/2 cup canola oil
3/4 cup milk
1 tablespoon honey
1 egg
2 ripe bananas, roughly mashed
1 dessertspoon cinnamon (or to taste)
1/3 cup crumbed walnuts

preheat oven to 180C. line muffin tins with large paper patty pans.

mix all ingredients together, until just combined.

3/4 fill patty pans..

cook for 25 - 30 minutes or until a skewer comes out clean.

cool and ice.


1 1/2 cups icing sugar
1 teaspoon cinnamon
approx. 3 tablespoons sour cream

mix the icing sugar and cinnamon with
enough sour cream to make a spreadable paste.

spoon or pipe onto muffins.
