APPLE CINNAMON MUFFINS with cinnamon sugar topping

PREHEAT OVEN TO 180C
FILL MUFFIN TIN WITH 12 PATTY PANS

2 cups self-raising flour
1 cup sugar
1 tsp cinnamon
1/2 tsp salt
1 egg
1 tsp vanilla
3/4 cup milk
1/3 cup oil
1 cup tinned pie apples chopped

mix all ingredients except the apple together.  then stir in apple.

evenly fill patty pans

cook 20 - 25 minutes till skewer comes out clean.

TOPPING

melt 1/3 cup butter in small deep bowl.

mix 1/3 cup sugar and 1 dessertspoon of cinnamon together.

while hot, dip each muffin into the butter and then roll in the sugar.

serve warm or cold
