MINTED POTATO SALAD

1 1/2 kilo potatoes
1 large onion
30 large mint leaves.
salt to taste
1 - 1 1/2 cups *praise 99% fat free mayonnaise

peel and chop potatoes into medium sized cubes.

boil potatoes in a pot of lightly salted water until just cooked.

process onion and mint together until finely cut, or finely chop if no processor.

tip hot potatoes into a bowl and stir in onion and mint mix.

cool.

stir in mayonnaise until potatoes are well covered.

refrigerate till needed.

* I use this mayonnaise because it has a nice tang to it.
