PUMPKIN, SPICE AND EVERYTHING NICE COOKIES
1 cup (227 grams) butter, softened
1 cup sugar
1/2 cup brown sugar, packed
3/4 cup cooked and pureed pumpkin
1 egg
2 teaspoons vanilla.
3 3/4 cups plain flour
1 1/2 teaspoons baking powder
1/2 teaspoon salt
1 teaspoon cinnamon
1/2 teaspoon nutmeg
1/2 teaspoon mixed spice
1/2 teaspoon ground ginger
cinnamon sugar
2 heaped tablespoon sugar
2 teaspoons cinnamon
preheat oven to 180 c.
line trays with baking paper
with an electric mixer, cream butter and sugars.
add egg, vanilla and pumpkin.
add all rest of the the dry ingredients, in 2 batches, mixing till well combined.
Roll into balls (about a heaped teaspoonful) and roll in cinnamon sugar.
place 12 to a tray and flatten slightly with a fork.
cook 15 mins or until lightly brown.
this makes a lot. I made 4 dozen then froze the rest of the dough.
