250 grams butter softened
1/3 cup icing sugar
grated rind 1 small orange
1 1/2 cups plain flour
1/2 cup cornflour

preheat oven to 180 c

line bottom of baking trays with baking paper

with an electric mixer, beat butter, rind and icing sugar till light and fluffy.

stir in combined flours.

roll half heaped teaspoon fulls of mixture into balls and place 12 at a time on trays.

slightly flatten with a fork lightly coated with cornflour.

cook approx. 12 minutes or until lightly brown.


sandwich together with orange butter cream.


113 grams butter softened
1 1/2 cups icing sugar
grated rind of 1 small orange
approx 5 teaspoons orange juice.

with an electric mixer, beat all together until smooth.

spread evenly between biscuits (about 1 teaspoon per biscuit).

will keep in an airtight container for 3 days. will soften.
