HOISIN CHICKEN

1 kilo chicken fillets trimmed and sliced
2 tablespoon oil
2 carrots julienned
1 red capsicum sliced
1 onion sliced ( I cut into quarters then halve the quarters longwise)
200 grams snow peas trimmed
salt and pepper to taste
1 cup hoisin sauce

heat 1 tablespoon of the oil in a large  wok or frypan, brown chicken  then remove.

add the other tablespoon of oil to wok or pan, add the vegetables and cook till tender.

return chicken to the pan with the sauce and salt and pepper.

bring to boil. remove from heat.

serve with boiled or steamed rice
