TIM TAM CHOCOLATE CHEESECAKE with strawberry cream

400 gm chocolate tim tams
200 gm white chocolate and raspberry tim tams
50 grams butter melted
500 grams cream cheese at room temperature
1/4 cup sugar
560 grams dark cooking chocolate
300 mls thickened cream whipped

line base of 22cm springform tin with baking paper

line side of pan with tim tams, alternating colours.

finely crush the left over chocolate tim tams and mix with the butter till combined.

press over base of pan.

refrigerate while making filling.

melt chocolate in a heat proof bowl over a pot of boiling water.


with an electric mixer, beat cream cheese and sugar until light and fluffy.

beat in chocolate. may look curdled but keep beating till smooth.

fold in cream.

spoon into pan and level top.

refrigerate till set.

decorate with strawberry cream, strawberries and chocolate.


600 mls thickened cream
2 tablespoons sugar
6 teaspoons strawberry essence
6 drops pink food colouring

beat all together till thick.
