CHICKEN WITH WILTED SPINACH AND FETA WITH SUNDRIED TOMATO SAUCE.

6 chicken fillets skin off and trimmed

put on lined oven tray, drizzle with olive oil and cover with aluminium foil.
cook on 175c for about 45 mins or till cooked through.

sauce

375 gm sundried tomatoes put through blender to break up
1 med onion chopped
3 cloves garlic chopped
6 pieces shortcut bacon chopped small
(I actually put the whole lot in the blender, but do the tomatoes seperate)
600 ml thickened cream
salt and pepper to taste


in a frypan saute tomatoes, onion, bacon and garlic till just cooked..not brown
add cream, bring to boil stirring. simmer for 5 mins then turn off heat and just let sit to gather flavour, till chicken is ready.

when chicken is cooked turn sauce back on to heat then add chicken to coat.

in a seperate pan, spray with cooking spray and add 160 - 200 gm spinach and just wilt. crumble over about 3 tablespoons feta cheese.

to serve put chicken and sauce on plate and top with spinach and feta
