LEMON COOKIES

2 3/4 cups plain flour
1 teaspoon bicarb soda
1/2 teaspoon baking powder
1/2 teaspoon salt
1 cup (226 gm) butter, room temperature
1 1/2 cups sugar
1 large egg,
1/2 teaspoon vanilla extract
zest of 4 lemons
3 tablespoons lemon juice
1/2 cup dessicated coconut

For Rolling

1/2 cup sugar


Preheat oven to 350°F.
Line or grease baking tray.

In a medium bowl, sift together the flour, baking soda, baking powder and salt. Set aside.

Using an electric mixer, cream together the butter and sugar until light and very fluffy; about; 4 minutes.

Beat in egg, vanilla extract, Lemon zest and juice.

Slowly mix the dry ingredients into the butter and sugar mixture

Roll dough into walnut sized balls and roll in sugar. Place on prepared baking tray 12 to a tray.

Bake in preheated oven for 8-10 minutes, or until very lightly browned.

Allow cookies to cool on cookie sheet for a few minutes before removing to cool on wire racks.
