pumpkin bread ( or banana)

1 kilo pumpkin cooked and mashed ( i cook mine with the skin on in the microwave for about 5 mins. then scoop the pumpkin out with a spoon)
1 cup plain flour
2 cups self raising flour
1 cup oil
1 1/2 cups sugar
4 eggs, beaten
2 tablespoons cinnamon
2 teaspoon vanilla essence
Pinch of salt


Preheat oven to 350ºF/180ºC.
In a mixing bowl, combine mashed pumpkin with oil


Add in eggs and vanilla, and mix.


Add in sugar, salt and cinnamon and mix. Add flour last and mix until just combined.


Pour mixture into a large greased and floured bread loaf pan

Bake for 1 hour (if making large could take more than an hour. if browning too much before cooked, cover with aluminium foil) or until a skewer comes out clean.


allow to cool before removing from pan.

can also use this too make banana bread by substituting 8 medium mashed bananas for the pumpkin.

makes 1 large or 2 standard loaves
